About This Position

We are opening a modern Greek restaurant in Downtown Manhattan and searching for a Chef-Partner to lead it. This is a partnership, not a hire. The right person will hold equity in the business, shape the culinary identity from day one, and build something they are personally invested in for the long term. The restaurant is centered on live-fire cooking, a prominent raw bar, and the warmth of Greek hospitality, drawing from Greek and broader Eastern Mediterranean traditions. The Chef-Partner will have full ownership of the kitchen, including food, people, culture, and numbers, and will be responsible for culinary vision, menu development, kitchen leadership, financial ownership, operations, and standards. Key Responsibilities: Shape and refine the menu, lead the live-fire program, operate a top-tier raw bar, build bread and meze offerings, develop a late-night bar menu, design private dining and event menus, take ownership of tableside elements and presentation, create a dessert program, manage vendor relationships, establish a visual identity for plates, recruit and manage the BOH team, create a positive kitchen culture, manage food costs and BOH labor budget, run weekly inventory cycles, participate in financial reviews, ensure DOH compliance, collaborate with FOH and GM, drive kitchen buildout, document recipes and standards.

Requirements

  • At least 3-5 years leading a kitchen as Executive Chef or Chef de Cuisine at a comparable level, depth in Greek and/or Eastern Mediterranean cooking, proven live-fire skills, experience running a raw bar program, experience opening at least one restaurant, financial literacy, track record of building stable teams, based in New York or willing to relocate. Distinct personal culinary perspective on Greek food, network of quality purveyors, comfortable in a partnership structure, holistic approach to guest experience, long-term vision, composure under stress.
