About Fillings: Fillings is a next-generation pie company redefining a nostalgic American classic through a luxury, experiential lens. We produce restaurant-quality pies for brand partnerships, events, and limited monthly drops, while building a pipeline of CPG products inspired by gas station nostalgia, reimagined at the highest level. Role Overview: We are looking for a Sous Chef to act as the operational and culinary backbone of our kitchen. This role leads daily production, manages a small but high-performing team, executes across DTC, brand partnerships, and wholesale, and plays a key role in R&D across both pies and CPG-style products. Core Responsibilities: Production Leadership & Kitchen Management: - Oversee daily production across DTC drops, brand partnerships, and wholesale - Own timelines, prep systems, and execution - Maintain consistency, quality, and organization standards Team Leadership: - Manage, train, and develop 2+ bakers - Build a culture of urgency, precision, and ownership - Step into all roles when needed Brand Partnership Execution: - Execute high-end custom pie production for brand partners - Translate R&D into scalable outputs for events and activations - Maintain fine dining level detail at scale R&D Support: - Support development of new pies and partnership flavors - Lead testing and iteration for nostalgic CPG products - Document and systematize recipes - Comfortable troubleshooting recipes and leading R&D alongside the Founder Wholesale Program: - Oversee pastry production for wholesale accounts - Use wholesale as testing ground for future CPG products - Ensure consistency, packaging readiness, and quality Systems & Operations: - Improve workflows, prep systems, and inventory - Align R&D with production and fulfillment - Identify inefficiencies and solve proactively Why This Role Matters: This is a foundational hire that will shape operations, product scaling, and the future of the Fillings CPG line.

Requirements

  • What We're Looking For:
  • - 5+ years in high-level pastry or kitchen environments (fine dining preferred)
  • - Strong technical pastry foundation with ability to scale production
  • - Confident in pastry knowledge and able to troubleshoot independently
  • - Proven leadership in fast-paced kitchens
